As a Personal
Trainer you might think that I constantly have new exercises going around in my
head, and of course I do but they fight about the space with new recipes.
Just like with
exercise you need to update your recipes regularly to make meals healthy
and interesting.
This is a new recipe
is that I have tried a few times and it’s really nice on its own or with fish
or chicken.
Chickpea Salad
50
g feta cheese
400g
tinned chickpeas, drained and rinsed
200g
cherry tomatoes
20
black olives
75g
parsley
1
tbsp pine kernels, toasted
A
handful of spinach, finely chopped
Dressing
1
garlic clove, crushed
100ml
water
65ml
low-fat natural yoghurt
Juice
of ½ lemon
Freshly
ground black pepper
In
a bowl, whisk all the ingredients for the dressing together and season with
black pepper to taste.
Place
chickpeas, tomatoes, olives, parsley, pine kernels and spinach in another bowl,
pour over the dressing and toss lightly together.
